We moved to Vegas two years ago from Troutdale and cannot pass up a chance to see the Beavers in a bowl game. FIRST TIME EVER!! Tickets start at $50, so they're not priced crazy. Be aware, parking is very expensive at the stadium. Those of you that will be here a few days, plan a trip to Boulder City, it is refreshing to be away from the gambling and hustle that is Las Vegas. There's a brew pub a block off the strip called Gordon Biersch, food and brews are decent. Be aware that that so-called $50 ticket price through the stadium site is through Ticketmaster and there's a $20+ fee for each ticket. For 300 level seats more along the sideline, it was cheaper for me to just request them through OSU.

Costco Travel. Checked on 12/15 to 12/17 Car Rental might be option.
Couple of decent and reasonable Italian Restaurants. Bootleggers out on South Strip. Capo Speakeasy Westside on Sahara. Old Vegas Style.

How about hotels? The OSU site mentions the Vdara Resort and Spa which is quite a ways from the stadium. The Luxor and Excalibur which are pretty close are both $300+ a night. Mandaly Bay showed no availability. Figure tickets for 2, room and airfare is going to run a couple grand at least !!! Not sure if it's still available, but my buddy booked circus circus couple a of days ago for a really good rate. I know it's not the best place but the rate was really good. And it's Vegas. Who needs sleep? Heck if one is willing to go that route and just needing a cheap place to crash I see the Motel 6 on Tropicana a block east of the Strip and a 1.5 mile walk from the stadium has rooms going for $122 a night that weekend ....

Old Vegas Style. When you say checked on 12/15 to 12/17 I'm not sure if you're talking about the date to head down or the date down and date back or what. At any rate, if you're looking at traveling on 12/17, which is the day of the game, just make sure you are aware that the game could be at 11:30 a.m. or 4:30 p.m.

I see lots of rooms avail at MGM Signiture. Might try Palms and Palms Place too That Hilton Resorts World package we got was not bad. It's just south of Circus Circus. Looks like the weekend starts at 190 for Friday and 240 ish for Saturday, but Thursday and Sunday are starting at 73 bucks, averages out nicely if you can stay the extra days. I almost want to exercise looking at their fitness room. IF it's OPEN (depends on convention traffic apparently) at the time, we're thinking about trying their hyperloop Tesla tunnel to the convention center on game day, from then it's hop on the monorail to the MGM then cross over to the Mandalay Bay/Luxor/Excalibur train then from there its supposedly just a 20 minute walk to the stadium. I have always liked the Signature. We've stayed there 3 or 4 times over the years.

Last trip to Vegas (end of 2021) I stayed at the Circa. Very nice. It's on Fremont, so not on the strip.

Really the only hassle is getting transportation out of the stadium. We usually just plan on hanging out for a few hours on or near the strip till traffic dies down.
By the looks of things there are lots of rooms avail at a decent rate. Resorts World is under $200. You really don't need to be near stadium if you plan accordingly...which it sounds like you've kinda figured out.
Just know leaving that stadium there will be 50000 walking in all directions, but most over the bridge toward MB and Park Place. If you're in that mass and want to catch a taxi or uber relatively quickly, I'd take the walkway from Park Place to Aria.
Or just chill down on strip for few hours and enjoy the Beaver victory with other Beaver fans!

Circa looks nice. Thought about staying at the Golden Nugget, they did a major remodel 15 years or so ago and another freshening a few years back. It was inexpensive when I looked a couple days ago.

Holy Cow - I may continue searching and/or think about using Alaska miles.

Vegas is a beer wasteland in my opinion, nothing here even approaches what Oregon breweries have to offer. However there is a few that are good. The Yard House on the strip and at Red Rock is pretty good. The Boulder Dam Brewing Company in Boulder City is as well. They are some brew pubs around Fremont Street that are pretty good as well.

Lots of great breweries in LV Abel Baker HOP Nuts Tenaya Craft Haus Lovelady Many others

Back 15 years ago or the Monte Carlo Brewery was the place, and about the only place, to go for micros, then they closed in 2009. Next year I couldn't find any micros at the big resorts. The following trip we found 32° (now called Knight Time I think) at the M so at least we could find beer.
Actual production breweries of a reasonable scale are kinda a new thing in Vegas, still way too few for a city that size.

Just throwing this out there. Tuscany Suites a couple of blocks down for strip on Flamingo. Then for Rat Hole type fun. Ellis Island down off Flamingo a couple of blocks Brewery, have no idea how bad. One of the few place in LV you can still play Craps and BJ for $5. Can't speak for the Hotel but it is likely cheap.
