Doesn't seem to be a lot of options for parking an RV. Several RV parks/campgrounds are first come first served. Nearest KOA already booked. Appreciate any insight.

I've never taken an RV to Omaha. I'm not surprised that there are limited options for RV camping at the time of the CWS. You might try some of the trailer parks as they sometimes accept RVs or have spaces for RVs.
Have you considered stealth camping? I'm a truck camper enthusiast and I know that this method is often used by the truck camping community - camping in plain sight in non-camping areas. There are places that permit you to do this openly such as Walmart, Cabelas, Home Depot and others. There are at least 5 Walmarts within 10 miles of the ball park and one Cabelas. There are 10-15 RVs on the OSU campus stealth camping in the parking lots every weekend. That might be possible at nearby Creighton University.
I recommend that if you're contemplating stealth camping in your RV, I'd search this out in the truck camper community to find out how to do this. This is the best way to stay in an area when no reservations are available.

For what it's worth my folks took my 15 year old son at the time in 2007 and ended up staying in Lincoln at an RV park as they could not get any closer. They rented a car and drove back and forth for the games. I believe Lincoln is about an hour away. Good luck and go Beavs!
