Runner on 2nd when the batter hits a slowly hit ball between 2nd and 3rd. The 3rd baseman attempts to field it but misses it , however the SS is backing up and moves into the basepath to field the ball, but is contacted by the runner. Runner interference or fielder obstructing the runner.

Runner's can't even stop to try and shield or confuse a fielder even if no contact is made.

Once it passes a fielder in position to make a play all obstruction rules are off.

Could really be interference, obstruction or just a train wreck depending on which player the umpire said reasonably was able to field the ball and the timing of the play. The ball getting past a defender in the infield is not a thing. The protected player could be an outfielder. If it happened as it seems you are describing, that the contact occurred as the SS was backing up the play (not making the play), and that the 3rd baseman was making the play on the ball, and the ump determined he was the protected player (best able to make the play), then it is obstruction. If the ump determined that the SS was the player best able to make the play - interference. If the 3rd baseman is protected defender and the runner made a reasonable effort to avoid the play on the ball and the SS made a reasonable effort to avoid the runner while the 3rd baseman was making the play, and they somehow ran into each other anyway - could be a train wreck (nothing) In most cases interference is called. If the SS is making a play on the ball when the contact occurs - interference.
